Bikini Recipe

Yields 10 people

Ingredients for the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Cocktail (produces 850ml, to serve 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish

Directions

To prepare the Citrus Syrup: Put all the ingredients inside a pan, bring to a gentle boil, mixing until the sugar dissolves. Next, take off the heat and leave to cool down completely. Decant into a sterilised bottle, close it and refrigerate it in the refrigerator, where it will keep for up to one month.

Preparing the Cocktail Base: Combine all the spirits and syrup into a large bottle, leave to sit for 60 minutes, then pass it through preferably using a fine cloth, so it's fully clarified.

When ready to serve: Add 85ml of your batch mix into your cocktail shaker filled with ice, and agitate lightly for a minute to cool it down. Filter into a frosted cocktail glass or similar, decorate with some cranberries and finish with a brief mist of mandarin oil above the glass.
